๐Ÿ— Golden Rice with Grilled Chicken

Ingredients (serves 4):
- 3 cups longโ€‘grain rice (washed and soaked)
- 2 large chicken pieces (drumsticks or thighs)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1 cup diced vegetables (carrots, red + green bell peppers)
- 2 tbsp tomato paste
- 1 tsp curry powder
- ยฝ tsp turmeric (for golden color)
- 1 tsp paprika or chili powder (optional, for heat)
- 3 tbsp vegetable oil
- 4 cups chicken stock or water
- Fresh herbs (chives or green onions) for garnish
- Salt & pepper to taste

Steps

  1. Prepare the chicken
  2. Season with garlic, curry, paprika, salt, and pepper.
  3. Grill or ovenโ€‘roast until crispy outside and juicy inside.

  4. Cook the rice

  5. Heat oil in a pot, sautรฉ onion + garlic.
  6. Add tomato paste, curry, turmeric, and stir until fragrant.
  7. Pour in rice + chicken stock, season with salt.
  8. Cover and cook on low heat until rice is fluffy.

  9. Add vegetables

  10. Stir in diced carrots and bell peppers just before rice finishes cooking.
  11. Let steam together for 5 minutes.

  12. Plate & serve

  13. Place rice in a serving dish.
  14. Top with grilled chicken.
  15. Garnish with fresh herbs.
